The kids have been learning that a well-balanced diet means eating foods of every colour of the rainbow. So instead of thinking about a mix of fruit and vegetables, think about eating a range of coloured foods. Unfortunately the party mix from the lolly isle doesn’t count!
They tell me red foods, such as tomatoes, strawberries, watermelon are great for the heart. Orange and yellow foods help you to see, green foods keep the colds away, and blue and purple foods are great for the brain. I’d like to think that altering my white wine with red wine also adds to that balance!
We’ve found a bright and colourful tomato salad that fits the bill. It’s colourful, quick and easy to prepare. Great for lunch or a side to your steak or fish. The first step is to pour yourself a glass of Oxford Landing Sauvignon Blanc to start.
1 punnet of coloured cherry tomatoes (yellow, red), chopped in halves
1 red tomato, sliced
1 yellow tomato - sliced
Baby spinach
1 teaspoon of chopped oregano
1 teaspoon of chopped basil
2 cloves of garlic, crushed
2 tablespoons of balsamic vinegar
3 tablespoons of Extra Virgin Olive Oil
Salt and pepper
Place all ingredients together in a large bowl and mix together. Cover and allow the flavours to go through the salad for an hour or two before serving.
Serves 4-6.
