The Details

Tasting Note Aromas of violets, cherry cola and lavender, giving way to a palate of plush dark cherries and chocolate.
Best Enjoyed With Mediterranean tapas or wood fired pizza.
Treatment Fermentation with yeasts indigenous to the vineyards was followed by malolactic fermentation and maturation in new and mature Hungarian oak and mature French oak barrels. Our aim has been to showcase the stylish fruit flavours and lovely tannins of Tempranillo complemented by very subtle oak.

The Details

Tasting Note Aromas of meyer lemon, nashi pear, white flowers and seaspray. A palate of lemon sorbet and green apples. Super moreish, a great pairing for all your future dinner parties. 
Best Enjoyed With Kingfish sashimi or salt and pepper eggplant. 
Treatment Winemaking for the Albariño was kept simple to best express the variety and the hills of Eden Valley where it was grown. The grapes were picked in the cool of the night to retain aromatics, then gently pressed at the winery before fermentation with naturally occurring yeast found on the berries. After fermentation the wine spent a few months on lees prior to bottling.

The Details

Tasting Note Pale straw in colour with green hues. Aromas of fresh pear juice with hints of red apple and strawberry. The pear and strawberry flavours continue on the palate, where they are joined with custard apple and anise, creating a rich and succulent palate. The wine finishes with lingering acidity and a hint of musk.
Best Enjoyed With Pair with chicken saltimbocca, Thai-style grilled eggplant, or an avocado and green apple salad.
Treatment Grapes were gently pressed to minimise colour and tannin extraction from the pink skins. Fermentation proceeded on full solids, conducted by yeast indigenous to the vineyard. The wine was then left on its lees until preparation for bottling.

The Details

Tasting Note A bold crimson red in colour with magenta hues. The nose has rich aromas of violets, black cherries and mulberries with hints of cassis and forest-floor characters. The wine opens with the pretty floral characters of the nose and a rich blackberry edge before progressing to the mocha oak mid-palate. It finishes with succulent tannins that continue the experience long after the wine has left your mouth.
Best Enjoyed With Pair with Angus beef fillet topped with garlic poached marron (what the locals refer to as steak and lake), or chargrilled kale with brown rice and onions.
Treatment The grapes for this wine are grown on a small selection of sites, most being around the Margaret River's flagship Wilyabrup sub-region, close to the Indian Ocean. The soil types, either sandy or laterite gravel soils, both restrict vine yields. There is a range of aspects and soil types through our vineyard sites, and these variances and selective blending provide Ringbolt with much of its complexity.

The Details

Tasting Note Pale lemon in colour. Ripe yellow peach and nectarine aromas with hints of cashews and a touch of flint. These flavours are joined on the palate by guava, pink grapefruit and lemon zest. A medium to full bodied wine that has a savoury and slightly salty oyster shell feel on the mid-palate that leads into a long, mineral finish.
Best Enjoyed With Enjoy with barramundi and lemon butter sauce; tofu and shiitake mushroom pho; or olives in a blanket
Treatment From the Wilyabrup sub-region of Margaret River, grapes were harvested and crushed in early March, followed by fermentation and maturation for ten months in French oak barriques, with 10% new oak. With texture and firm acidity, this wine promises excellent aging potential for up to ten plus years.

The Details

Tasting Note Deep magenta in colour. Red plum aromas with lovely oak notes and perfumed florals such as violets with hints of dried herb. The palate is plush and full bodied with the Merlot showing through as blueberry and blackcurrant fruits. The sweet fruit is well supported by the Cabernet tannins and acidity, along with the dark chocolate edge from the oak. This vibrant, fresh wine will continue to delight over 7+ years.
Best Enjoyed With Try with a rich, tomato based tortellini and aged parmesan or ratatouille and herbed polenta.
Treatment Both Cabernet Sauvignon and Merlot are harvested at various ripeness levels that captures a diversity of individual flavours. As the fermentation commences, the temperature is allowed to peak early at 30°C, then given more control at around 22°C. This ensures good extraction of colour and tannin. The wine was then matured for 11 months in French oak barriques (9% of them new), balance in one year and older French oak barriques and hogsheads.
