Tasting Note Classic dry Prosecco with a modern Australian twist. Flavours of passionfruit, apple, pink peppercorn, green melon, pineapple, mint, flat leaf parsley, tropical, savoury, moreish, chalky.
Best Enjoyed With Fresh prawns with lemon aioli or tomato and basil bruschetta.
Treatment All aspects of winemaking are focused on maintaining a refreshing, aperitif style sparkling wine. The grapes were harvested and gently pressed before fermentation to produce the base wine. The base was kept on yeast lees for a number of months to maintain freshness before secondary fermentation and bottling.
