The Details

Tasting Note Pale lemon in colour. Ripe yellow peach and nectarine aromas with hints of cashews and a touch of flint. These flavours are joined on the palate by guava, pink grapefruit and lemon zest. A medium to full bodied wine that has a savoury and slightly salty oyster shell feel on the mid-palate that leads into a long, mineral finish.
Best Enjoyed With Enjoy with barramundi and lemon butter sauce; tofu and shiitake mushroom pho; or olives in a blanket
Treatment From the Wilyabrup sub-region of Margaret River, grapes were harvested and crushed in early March, followed by fermentation and maturation for ten months in French oak barriques, with 10% new oak. With texture and firm acidity, this wine promises excellent aging potential for up to ten plus years.

The Details

Tasting Note Initial aromas of spice, lemon curd and grapefruit opens to stone fruits with a hint of peach yogurt. The palate is defined with brilliant, fine acidity, the texture of sun-kissed quartz and crushed oyster shell. Flavours of pear fill the mid-palate, with a seam of citrus keeping focus on the long, salivating finish.
Best Enjoyed With Chicken piccata with rocket, lemon vinaigrette and parmesan flakes. Grilled asparagus pasta with a lemon sauce, black pepper and crispy sage leaves.
Treatment The fruit was meticulously hand-picked before whole bunch pressing, and then placed into a mix of new and older French oak puncheons and a 700 litre ceramic egg for 10 months. Winemaking included fortnightly stirring to assist develop texture and malolactic fermentation to naturally adjust acidity for balance and structure.

The Details

Tasting Note The aroma is an alluring combination of mandarins and lemon with white peach, oyster shell, quince and flint. The palate is defined by delicate citrus fruit, complexed with a saline texture from exposure to the southern sea air and a finish that lingers.
Best Enjoyed With Chicken breasts poached on mint, cumin and allspice served with tabouleh and lemon yogurt. Farfalle pasta with mixed beans in a fennel based tomato sauce.
Treatment The grapes were handpicked and whole bunch pressed with the free run juice and pressings kept separately. After settling, the juice was placed into French oak puncheons and a ceramic egg for fermentation. Towards the end of this process, lees stirring was introduced and continued, bi-weekly for 3 months until most of the malolactic fermentation was completed. The wine was topped as required during the next 8 months prior to blending and bottling.

The Details

Tasting Note Pale gold with slight green-gold tints. Complex aromas of yellow citrus, cut apple, stone fruit and fresh fig with notes of struck flint, brioche and a hint of spicy French oak. Flavours of fresh peach, citrus zest, green mango and roasted hazelnuts are underpinned by a fine creamy texture and flinty bottle complexity. The Heggies minerality which is such a feature of this vineyard leads the wine to an elegant, lingering finish.
Best Enjoyed With Enjoy with pan seared scallops with pea puree and crispy pancetta or potatoes au gratin.
Treatment Fermented and matured for 11 months in French oak barriques (28% new, balance in 1 year and older) and 42% of the blend was matured in ceramic wine eggs. Our Reserve Chardonnay contains grapes produced by Bernard clones 96, 95 and 76. All vines for this wine were planted in 1992.

Tasting Note Pale green-gold in colour. Fragrant aromas of fresh stone fruits and citrus zest with subtle hints of roasted hazelnuts and a touch of flint. Palate with flavours of freshly picked peaches and nectarines are complemented by a fine, creamy texture on the mid-palate, distinct and lively minerality with refreshing citrus acidity to finish.
Best Enjoyed With A lovely accompaniment to pan-seared crispy skin salmon and citrus hollandaise sauce or tofu scramble with grilled asparagus.
Treatment Fermented and matured for 11 months in new French oak barriques (34%), balance in one year and older French oak barriques.

The Details

Tasting Note Bright straw in colour with green hues. This wine is fruit dominant with vibrant aromas of peach, pineapple and melon on a fresh bread background. With time in the glass, aromas of roasted almonds, nectarine, and flint emerge. This full-bodied Chardonnay is fresh and mineral, supported by fine, fresh acidity and a long finish.
Best Enjoyed With Hill-Smith Estate Chardonnay is made to be paired with food. Enjoy with mushroom risotto with thyme and truffle oil; or sun dried tomato, parmesan and pesto gnocchi.
Treatment The finer flavours produced by these clones, in combination with the use of natural ‘wild yeast’ fermentation by indigenous vineyard yeasts, produce a more complex and elegant wine with rich creamy flavour and tangy acidity. Palate structure and texture is further enhanced through extended lees contact. Around 50% of the blend was fermented and matured in new (15% of the final blend) and 1-3 year old fine grained French barriques to add weight and texture, with the balance of the wine fermented in stainless steel to retain fruit freshness and vibrancy.
